Muffins are tiny individual quick breads. Even though they look a lot like cupcakes, muffins aren’t nearly as sweet as their small cake cousins. They aren’t meant to be. Muffins have a more dense texture than a cupcake, not as much sugar in the batter and tend to be a touch heartier. There’s no frosting on a muffin, either. You can however, sprinkle on a healthy portion of Gerbs Dark Chocolate before baking. Don’t skip that step!

In this recipe, you can use your favorite gluten-free flour. This recipe is free from gluten, dairy, soy, peanuts, tree nuts and corn.

Ingredients
  • 1 1/4 cups Gluten Free Flour --your preference
  • 1/4 cup Gerbs Cocoa Powder
  • 1/3 cup Coconut Sugar --or your preferred sweetener
  • 1 tsp baking soda
  • 7 oz dailry free milk --try unsweetened coconut milk
  • 2 eggs
  • 1/3 cup Liquid Coconut OIl --+ add 1 teaspoon of oil to quantity
  • 1 tsp Vanilla Extract --pure
  • 1/4 cup Gerbs Dark Chocolate --use Gerbs mini chips or the Jumbo

Instructions
  1. Preheat oven to 400F.
    Line a 12-section muffin pan with parchment liners.
    Combine flours, cocoa powder, sugar and baking soda in a large bowl; whisk to blend.
    Add oil and stir into dry ingredients until mixture is thick and no visible dry parts remain (this will keep your coconut milk from clumping in the batter when the cooler liquid ingredients are added). The mixture will be very thick.
    HOW TO MAKE DARK CHOCOLATE MUFFINS
  2. In a separate bowl, whisk together milk, eggs and vanilla.
    Add liquid mixture to dry/coconut oil mixture.
    Stir vigorously to blend to a smooth batter.
    Evenly divide batter among the 12 parchment lined muffin pan sections, then top with the Gerbs chocolate.
    Bake approximately 18 minutes, then remove from oven to cool a bit before serving. The aroma will be intoxicating. Steady yourself.

  1. Found I can sub out the eggs with flax eggs and use a 1 cup oat flour (processed the rolled oats in blender) with 1/4 homemade whole hemp seed meal. Deep nutty flavor, the rise is a bit off and I think it needs a bit of adjustment but more allergen friendly this way.
