2. DARK CHOCOLATE CHIPS
3. RAW PUMPKIN SEED KERNELS

ABOUT PUMPKIN SEEDS

Pumpkin seeds are the highest vegetarian source of zinc, which is incredibly supportive for the immune system (hello upcoming flu season)! They are also rich in magnesium, tryptophan, manganese, phosphorous and iron.

Ingredients
  • 3 cups Gluten Free Flour - We used Brown Rice Flour
  • 1/2 cup Gerbs Pumpkin Seed Meal
  • 1 cup Sunflower Oil
  • 2 tsp Cinnamon
  • 2 tsp Baking Powder
  • 2 tsp baking soda
  • 4 eggs
  • 1 tsp salt
  • 2 cups sugar - Your choice of sweetener. Raw Coconut Sugar is quite good.
  • 1 cup Fresh Pumpkin - Drain of moisture. You can also used organic canned pumpkin.
  • 1 cup Gerbs Dark Chocolate Chips
  • 1/2 cup Gerbs Raw Pumpkin Kernels

Instructions
  1. 1. Mix the dry ingredients in a bowl.
    2. Add flour, eggs & oils blending slowly.
    3. Fold in chocolate chips & pumpkin seeds.
    4. Pour the batter into a greased 10 x 11 inch Bundt pan (use parchment paper instead of greasing the baking pan if you wish) and put into a preheated oven at 350 degrees.
    5. Bake for 1 hour 20 minutes. It’s done when you insert a toothpick into the bread and it comes out clean. Now...go get your favorite ice cream!
