Ingredients
  • 2 cups raw cleaned pumpkin seeds
  • 1 tsp brown sugar - or Raw Coconut Sugar
  • 1 tsp sea salt - use SEA SALT. Any brand but must be SEA SALT.
  • 2 tbsp pure maple syrup - use REAL maple syrup not pretend syrup!

  1. Scoop out the seeds from the large pumpkin you will carve later.
    2. Watch the video to see how to clean the seeds.
    Let cool. The seeds will keep in an airtight container at room temperature up to 5 days (but they won't last that long!). Now you can gobble these down while you carve the pumpkin! 3. Simmer the pumpkin seeds in sea salted water before flavoring them. Do do this, place the seeds in a sauce pan with just enough water to cover, adding 1 tablespoon of sea salt (any brand of Sea Salt has a strong, unique flavor. Much better than table salt) for every cup of pumpkin seeds. Bring it to a boil and let them simmer for about five minutes. Strain the seeds and blot dry.
    4. Preheat oven to 375 degrees.
    5. Mix all ingredients in a bowl.
    6. Line a large baking sheet with parchment paper, spreading the seeds out into a single layer. Use two baking sheets if you have to.
    7. Roast them at 375 degrees for about 20 minutes, or until the seeds begin to look toasted – don’t let them burn!
