Tale of Two Tacos! Cauliflower or Beef

The Options are Limitless

Taco’s! There are not many American meals that can be both quick to pull together on a limited schedule but also complex at the same time with so many layered flavor profiles! Think about it, taco’s can be made fast, quick and easy or you can take your time, slowly build the flavor profiles together, slow cook the meat, put thought into the toppings to provide options so that each and every taco can be completely different! We say this without a doubt, not many average family meals provide this versatility.

We offer you two recipe options, that you can easily follow … or come up with one of your own versions!

Gerbs Vegan Cauliflower Tacos

INGREDIENTS:

  • 1 Whole Cauliflower (about 1 1/2 cups) or store Cauliflower Rice
  • 4 oz Fresh Portabella Mushrooms
  • 1/2 cup Gerbs Raw Sunflower Seeds
  • 2 Tbs Soy Sauce
  • 2 Tbs Gerbs Cayenne Pepper Powder
  • 2 tsp Gerbs Ground Cumin
  • 1 tsp Gerbs Smoked Paprika
  • 1/2 tsp Gerbs Garlic Powder
  • 1/2 tsp Gerbs Onion Powder
  • 1/4 tsp Gerbs Ground Pepper
  • 1/4 tsp Gerbs Sea Salt
  • Hard Taco Shells
  • Soft Corn Tortillas

INSTRUCTIONS

Preheat oven to 350 degrees F. Lightly pulse the mushrooms in a food processor until you have a rice like consistency.

Separately pulse raw sunflower seeds, to the same consistency, add mixture to large mixing bowl. Remove the core and leaves of your cauliflower and cut into small pieces. Pulse the cauliflower to the same consistency and add to bowl. Stir in soy sauce and mix thoroughly. Stir in seasonings & spices and mix well, making sure everything is thoroughly incorporated.  Spread mixture onto a parchment lined baking sheet and bake for 30 minutes. Stir lightly and continue baking for an additional 15 minutes.

Gerbs Vegan Cauliflower Tacos Instructions

Gerbs Traditional Ground Beef Tacos

INGREDIENTS:

  • 1 Pound 93% Ground Beef
  • 1 Pound Ground Meatloaf Mix
  • 2 Tbs Olive Oil
  • ¼ Cup Salsa
  • 2 Tbs Soy Sauce
  • 2 Tbs Gerbs Cayenne Pepper Powder
  • 2 tsp Gerbs Ground Cumin
  • 1 tsp Gerbs Smoked Paprika
  • 1/2 tsp Gerbs Garlic Powder
  • 1/2 tsp Gerbs Onion Powder
  • 1/4 tsp Gerbs Ground Pepper
  • 1/4 tsp Gerbs Sea Salt
  • Hard Taco Shells
  • Soft Corn Tortillas

INSTRUCTIONS

Over medium high heat non-stick deep sided pan, add 1 tbs olive oil and sauté ground beef and meatloaf mixture, stirring occasionally until fully cooked. Drain excess moisture/fat, lower heat, add back to pan, add remaining olive oil, salsa and slowly whisk together all powders seasonings & spices. Next mix in ground beef, stir rigorously until meat is all broken down and separated, top with soy and/or sesame oil.

SERVING

Place Cauliflower or Beef Taco in large bowl along with other toppings of choice. Build you tacos with grated cheese on the bottom, meat second and top as desired, finish with a dollop of sour cream. Try to make a different taco every time. The best serving options is investing in a massive rotating ‘lazy-susan’ serving board serving board so that everyone can get their hands on the topping of choice.

Ingredients

  • 1 large Onion (diced)
  • 1 large Red Bell Pepper (seeded & diced)
  • 1 large Green Bell Pepper (seeded & diced)
  • 6 cloves Garlic (minced)
  • 2 Tbs Extra Virgin Olive Oil
  • ¼ cup Vegetable Broth (for sautéing)
  • 1/2 cup Bulgur Wheat, uncooked (optional)
  • 1 can Tomato Sauce (no salt added) (8oz)
  • 1 can Diced Tomatoes – Fire Roasted
  • 3 cups Vegetable Broth (low sodium)
  • 1/2 Cup ground Gerbs Chia Seed Meal (thickening)
  • 1/2 can of Refried Beans (optional)
  • 1 Tbs Gerbs Cayenne Pepper Powder
  • 1 tsp Gerbs Chipotle Pepper Powder (optional if you do not want smoke)
  • 1 tsp Gerbs Habanero Pepper Powder (add more to make it Spicer)
  • 2 tsp Gerbs Ground Cumin
  • 1 tsp Paprika
  • 1 tsp Gerbs Oregano
  • 1 can of Pinto Beans
  • 1 can of Large Dark Red Kidney Beans
  • 1/2 tsp Gerbs Black Pepper
  • 1 tsp Gerbs Himalayan Pink Sea Salt
  • 1/2 tsp Gerbs Garlic Powder
  • 1/2 tsp Gerbs Onion Powder

Best Allergy Friendly World Famous Vegan Chili

Instructions

Add olive oil, chopped onions, and peppers into a large heavy-duty non-stick soup pot, and sauté on medium heat for 3-4 minutes, next add veggie broth to the de-glaze pan once onions are translucent and soft. Add minced garlic and sauté for an additional 30 seconds until fragrant. Add uncooked bulgur and continue to stir for a few minutes until heated through. Add tomatoes, tomato sauce, and remaining broth. Add in spices and stir until mixed well. Add all the beans and Chia seed meal and stir until completely incorporated. Taste for salt & pepper, give the chili one more good stir and bring it to a slow boil. Reduce heat, cover, and simmer for 15 to 30 minutes.

Gerbs Dried Cherry Pie Ingredients:

  • 3 Cups Gerbs dried cherries (FF/100)
  • 3 1/2 C. boiling water
  • 1/4 C. all purpose GF Flour
  • 1 C. sugar
  • 1 tsp. Vanilla Extract

Gerbs Dried Cherry Pie Directions:

Pour boiling water over dried cherries, cover and let soak for 30 minutes. Turn burner on medium, simmer and add sugar and flour to thicken. Remove from heat, add vanilla extract. Pour into prepared pie crust (add top crust optional). Bake at 400 degrees for about 35 minutes.

History of Hot Chocolate

We all know hot chocolate as the warm, rich drink we enjoy on a cold night by the fire, or after engaging in winter activities such as ice skating and skiing. But have you ever thought about this delicious beverage’s origins? Hot chocolate’s history goes quite a way back, and the drink has changed over the years, evolving from cold and spicy to warm and sweet.

It Started in Mexico

As early as 500 BC, the Mayans were drinking chocolate made from ground-up cocoa seeds mixed with water, cornmeal, and chili peppers (as well as other ingredients)—a much different version from the hot chocolate we know today. They would mix the drink by pouring it back and forth from a cup to a pot until a thick foam developed, and then enjoy the beverage cold. Although the chocolate drink was available to all classes of people, the wealthy would drink it from large vessels with spouts, which later would be buried along with them.

INGREDIENTS

 

¼ Cup Gerbs Cocoa Powder

(Dutch or Natural)

3/4 teaspoon vanilla extract

4 cups Milk (non-dairy substitute)

1/3 cup Distilled Water

1/2 cup Pure Cane Sugar (monk fruit substitute)

Dash salt

Mini Marshmallows (optional)

Coarsely Chopped Gerbs Jumbo Dark Chocolate Chips

Ground Dutch Cocoa Powder Natural Cocoa Powder

DIRECTIONS

Whisk sugar, Gerbs Cocoa powder, and salt in a medium saucepan; stir in water. Bring to a boil over medium heat, stirring constantly; boil and stir for 2 minutes.

Reduce heat to medium, add milk; stir and heat until the desired temperature, do not leave this or it will boil over and cause a large mess. Remove from heat; add vanilla. Beat with a whisk until foamy. Pour into large save mug, top with marshmallows and Gerbs Dark Chocolate Chips. About six 6-ounce servings.

Kicked Up Versions:

CINNAMON COCOA: 1/4 to 1/2 teaspoon Gerbs ground cinnamon.

MINT COCOA: 1/2 teaspoon mint extract OR 3 tablespoons crushed hard peppermint candy.

MOCHA COCOA: 1 to 2 tablespoons finely ground Italian roast coffee.

ADULT: 2 shots of Peppermint Schnapps.

KIDS: Drizzle melted dark chocolate and caramel into mug – let cool.

  • 1/2 cup liquid of choice (filtered water, sunflower milk, dairy milk, almond, cashew or coconut milk)
  • 1/2 cup Gerbs Traditional Rolled Oats (sku; OT/098)
  • 1/3 to 1/2 cup Greek style yogurt (optional)
  • 2 tsp. Gerbs Black Chia Ground Meal (sku; ML/091)
  • Dusting Gerbs Ground Cinnamon (sku; SP/400)
  • 1/2 banana, mashed
  • 1/3 cup Gerbs Sweetened Banana Chips, optional (sku; FF/098)
  • 1 tsp. Gerbs Golden Flax Seeds (sku; FX/100)

Gerbs Topping Suggestions: Dried Blueberries, Cranberries, Goji Berries, Raisins; Seeds, pumpkin, sunflower, hemp), Granola, Pumpkin or Super Five Seed Butter.

Directions

Add liquid, Gerbs Oats, yogurt, Gerbs chia seed meal chia, and mashed banana to a mason jar or container and give them a good stir. Refrigerate overnight or for at least 5 hours. In the morning, add additional liquid if you’d like. Once you achieve the desired consistency, top with Gerbs banana chips (broken), Gerbs golden flax seeds, and a dusting of Gerbs cinnamon powder. You can leave out the mashed banana and add any toppings you desire for a different overnight oat each morning. 1 cup distilled bottled water

Splash Lemon Juice (optional)

Honey or Maple Syrup for taste (optional)

INSTRUCTIONS

In a small saucepan, bring water to boil. This step can be done in a microwave oven to save time.  Add ground turmeric and ginger powder, reduce heat, and simmer for 10 minutes. Stir in lemon juice (optional) and strain tea into a cup (optional). Add sweetener to desired taste.

Well-loved for their sweet, mild flavor and multiple uses, figs are low in calories and have no fat. One large, raw fig has just 47 calories. If you’re looking to shed pounds, figs are a great replacement for unhealthy snacks (in moderation). Both raw and dried figs are good for you. One ounce of dried figs has 3 grams of fiber. Fiber may help alleviate constipation and keep you feeling full longer. It may also help lower cholesterol and control blood sugar levels. Figs are a good source of calcium, which can ward off osteoporosis as well as other health issues. You won’t find a better plant source of calcium than figs. If you’re hoping to add more antioxidants to your diet, you can’t go wrong with figs. Figs benefits for hair

Figs are a popular ingredient in many shampoos, conditioners, and hair masques. The fruit is believed to strengthen and moisturize hair and promote hair growth. Scientific research on the benefits of figs for hair is lacking, but there’s some evidence that some of the vitamins and minerals may help keep your hair healthy. One study in Trusted Source looked at the role of zinc and copper in hair loss. A deficiency in either mineral is believed to contribute to hair loss. Zinc is thought to speed up hair follicle recovery. Study results confirmed that hair loss may be linked to zinc deficiency, but not copper.

Oatmeal Fig Bars – Homemade Fig Newtons

Oatmeal Fig Bars are a chewy, fig-filled bar made on the lighter side.  They taste pretty close to a Fig Newton, but homemade is always better, right?  When I was researching for a healthy fig bar recipe made with oatmeal, I was surprised to find there weren’t many (or rather any that were suitable).  So I decided to take the dough of a oatmeal date bar recipe and replace the date filling with a fig filling.  Because I wanted these to be healthier, I reduced the amount of sugar in the dough and eliminated added sugar from the filling.  In lieu of sugar, I added lemon juice and zest to the filling to brighten the flavor and also act as a thickener.  The result was just what I had in mind for a healthy fig bar, and they were also really simple to make.

When I was making these Oatmeal Fig Bars, I couldn’t help but think about my grandma and grandpa and chuckle.  I’ve talked many times about my grandma and what a wonderful baker she was.  While I’m sure my grandpa loved all of her (delicious!) baked goodies, he always had a stash of Fig Newtons in their pantry.  I really can’t blame him.  Not much beats a Fig Newton (except for these bars of course!.. but I digress).  I don’t think my grandma ever attempted to make a homemade variety of his beloved fig bars, but I’m sure they would have been similar to these…and my grandpa would have stashed these instead!

Ingredients

  • 1 cup Gerbs Dried Figs, chopped & stems removed (8 ounces)
  • ½ cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1½ cups Gerbs Traditional Oats
  • 1 cup all-purpose flour
  • ¾ cup packed brown sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup butter, melted (I used light butter)
  • 1 egg white
  • Cooking spray

Instructions

In a small sauce pan, put figs, water, lemon juice and zest, and bring to a boil. Simmer until mixture starts to thicken (about 3 minutes). Let cool for about 5 minutes. Put filling in food processor and process until smooth. Set aside. Preheat oven to 350 degrees. Spray a 8-inch baking pan with cooking spray and set aside. In a large bowl, whisk together oats, flour, sugar, baking soda and salt. Add butter and egg white to oat mixture and stir until combined. Press half of the oat mixture into the prepared baking pan. [Note: I used waxed paper to press and spread the mixture into the pan]. Next, carefully spread with fig mixture. Last, drop pieces of remaining oat mixture over the fig mixture so it appears crumbly and then gently pat it down [Note: I used waxed paper for this step]. Bake for 20 to 25 minutes or until lightly browned. Cool on wire rack.

Ingredients

1/2 cup Gerbs raw pumpkin seeds

(you can also substitute our ground pumpkin meal or unsalted roasted seeds)

2 tablespoons grated Parmesan

3 cloves fresh garlic

3/4 cup ​fresh basil leaves

3/4 cup fresh parsley leaves

2 tablespoons fresh lemon juice

1/2 cup Extra Virgin olive oil

Gerbs Himalayan Sea Salt to taste

Gerbs Whole Black Pepper to taste

Pumpkin Pesto

Steps to Make Gerbs Pumpkin Pesto

Combine our pumpkin seeds, Parmesan, ground salt/pepper, and garlic in a food processor. Pulse on and off, for about 20 seconds, until the seeds are almost ground. If you substitute Gerbs Pumpkin Seed Meal, this step will be must faster. You can also use Gerbs Chia Meal; the high fiber content will serve as a natural thickening agent for soups or sauces.

Add basil, parsley, lemon juice, and olive oil, and pulse on and off for about 40 seconds (you may want to ​scrape down the sides with a spatula in between pulses), until all the ingredients are combined. The mixture should be more like a course paste than a liquefied sauce, so be careful not to over-process.

Transfer to a bowl, taste test and adjust the with salt & pepper. Be sure to taste this pesto throughout the process. Once you become comfortable with this recipe, you can make variations with other Gerbs seeds; sunflower, black & white chia, hemp hearts, golden and brown flax.  Serve immediately or refrigerate for up to two days.

Gerbs Dark Chocolate Chip Pumpkin Cookies

As soon as cooler September afternoons and nights hit, there’s no better way to enjoy a crisp ‘fall’ day than in the kitchen with the kiddo’s, than baking up a fresh & food allergy friendly batch of Gerbs dark chocolate pumpkin cookies. Adding our flavor packed (new) pumpkin seed butter, fresh pumpkin puree and pumpkin pie spice to this basic chocolate chip cookie dough makes for an amazing fall treat. These will be a hit at any school bake sale or dinner party.

INGREDIENTS

  • 2 1/4 c. Gerbs all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. pumpkin pie spice
  • 1 c. (2 sticks) unsalted butter, softened
  • 3/4 c. brown sugar
  • 1/2 c. granulated sugar
  • 3/4 c. pumpkin purée
  • 3/4 c. Gerbs Salted Pumpkin Butter
  • 1 large egg
  • 2 tsp. pure vanilla extract
  • 2 c. Gerbs traditional semi-sweet chocolate chips
  • 1/4 c. Gerbs raw pumpkin seed kernels (optional)

Gerbs Dark Chocolate Chip Pumpkin Cookies Ingredients

DIRECTIONS

Preheat oven to 375° and line two large baking sheets with parchment paper.

In a small bowl, whisk together flour, baking soda, and pumpkin spice.

In a large bowl using a hand mixer, cream together butter and sugars until light and fluffy. Beat in pumpkin puree, Gerbs pumpkin butter, egg, and vanilla extract until combined, then add flour mixture. Beat on low until no raw flour appears, then fold in Gerbs chocolate chips. Refrigerate dough for 30 minutes.

Scoop 1” balls onto prepared baking sheets, press several pumpkin seeds onto top raw balls (optional, not in picture), 2 inches apart, and bake until puffed up and golden around edges, about 12-14 minutes. Set aside 2-3 minutes, then cool on baking rack.

About the Teal Pumpkin Project

The Teal Pumpkin Project is a movement to raise awareness of food allergies and to create a safer, more inclusive Halloween for all trick-or-treaters. Putting a teal pumpkin on your doorstep will let trick-or-treaters know that your house is food allergy-friendly. This can mean that you offer non-food treats or trinkets, such as glow sticks or small toys, and/or that you have allergy-friendly candy which is free of the top 9 allergens (including sesame). This simple act allows kids to enjoy the same allergy-friendly trinkets or treats whether they have food allergies or not. Teal is the new orange, and we hope you will join us in painting Halloween teal. Getting started is easy:

  1. Provide non-food treats and/or allergy-friendly candy (free of the top 9 allergens, including sesame) for trick-or-treaters
  2. Place a teal pumpkin in front of your home to alert trick-or-treaters that you have a food-allergy friendly home

Gerbs Fried Green Tomatoes

Summer vegetables are right around the corner, home gardens and the bountiful farmers markets across the region, give you so many options! When these tomatoes are frying, Galen and I can close our eye’s and we are transported back to Dennisport Cape Cod, in a small cottage on the beach, the sound of waves, fresh percolated coffee, bacon, eggs, and our mother Lorraine frying a fresh batch of Green Tomatoes (she also did Zucchini Flowers)! Ingredients:

  • 4 large Green Tomatoes
  • 2 Eggs (substitute with Flax Egg)
  • 1/2 cup Milk (substitute flax milk)
  • 1 cup Gerbs All-Purpose Flour
  • 1/2 cup Gerbs Super 5 Seed Meal
  • 1/2 cup Gerbs Breadcrumbs
  • 2 teaspoons Gerbs Himalayan Sea Salt
  • 1/4 teaspoon Gerbs Ground Black pepper
  • Pinch Gerbs Rosemary Garlic Seasoning
  • ¼ cup Parmesan Cheese (optional)
  • 1 quart Sunflower/Pumpkin Oil

Directions:

  • Slice tomatoes 1/2 inch thick. Do not include ends. Place on large board and coat with sea salt to extract natural juices, let stand 10 minutes.
  • Whisk eggs and milk together in a medium-size bowl.
  • Sift flour onto a large plate, set aside. Mix Super Seed Meal, breadcrumbs, rosemary garlic mix, salt & pepper on another plate. Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumbs to completely coat.
  • In a large cast iron skillet, pour sunflower oil (enough so that there is 1/2 inch of oil in the pan) and heat over a medium-high heat. Place tomatoes into the frying pan 5 or 6, depending on the size of your skillet. Overcrowding your skillet, allowing tomatoes to touch will decrease temperature and likelihood of getting a good crust. When the tomatoes are browned fork flip and fry them on the other side. Remove fried tomatoes and place on paper towels. Top with Parmesan cheese (optional).
